Ingredients
- 200 g butter
- 200 g caster sugar
- 4 eggs
- 200 g self-raising flour
- 2 tsp of vanilla essence
- red, orange, yellow, green and blue food colouring
For the icing
- 450 g icing sugar
- 200 g butter
- 2 tablespoons of water
How to make it
- Mix the butter and sugar together until smooth. Add the eggs and mix well. Gradually add the flour, then the vanilla essence.
- Divide the mixture into five bowls. Pour about 1/2 tsp of food colouring into each bowl to make red, orange, yellow, green and blue cake mixture. Stir each bowl of mixture
so that the colour is well mixed in. - Starting with the blue mixture, add a spoonful to your cupcake cases. Repeat with the green, yellow, orange and red icing, layering each on top of the last.
- Bake the cupcakes in a moderate oven for about 20 minutes – they are done when they rise up and spring back into shape when lightly pressed. Leave them to cool.
- For the icing, put the icing sugar in a large bowl. Cream the butter in a large bowl. Add this to the icing sugar and mix together well, adding the water gradually. When the cupcakes are cool, spread a layer of icing over each one.
