Apple pancakes

Ingredients

  • 130 ml milk
  • 1 egg
  • 2 tbsp butter
  • 135 g plain flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp caster sugar

For the sauce:

  • 3 apples (any type)
  • 50 g butter
  • 1/2 tsp cinnamon
  • 1 tbsp soft brown sugar

How to make it

  1. Whisk the milk and egg together in a bowl. Melt 1 tbsp of butter and whisk this in.
  2. Put the flour, baking powder, salt and sugar into a large bowl. Gradually pour the milk mixture into the flour mixture, beating constantly until you have a smooth batter. Leave this to stand for a few minutes.
  3. Melt 1 tbsp of butter in a frying pan over a medium heat. Add a ladle of batter to make a small, thick pancake. When the top of the pancake bubbles, turn it over and cook until both sides are golden brown (it should be about 1 cm thick). Repeat until all the batter is used up.
  4. For the sauce, peel the apples and remove the cores, then slice them thinly. Heat the butter in a saucepan, add the cinnamon and allow to bubble for a minute. Add the apple slices and sugar, and coat the apples with the mixture. Cook over a low heat for about five minutes, until the apple slices are soft. Pour over the pancakes and serve.
